Step 4 - The Oil Emerges

MalaxerThe mixed olive mash is then passed from the malaxer into the. Here it will be spun through a series of cylindrical grates. Oil and water will be spun out of the mash which will be spun a few more times before it leaves the system.

 

CenterfugeThis is a three phase centrifuge, olive mash enters the system and oil, water, and mash exit it separately. Both the oil and water will pass through the vertical separator which will further separate the two from each other.

 

The Oil EmergesThe oil leaving the vertical separator is free of water and all but the smallest particles left from the mash.

Producers wanting a uniformly clear olive oil can add a filter to the milling system. Those desiring to retain the remaining particulate matter can bottle the unfiltered oil.

At Pacific Sun, we prefer the flavor of unfiltered oil. Thus we have eliminated the filtering process from our production.
